Pizza Bubbles

Today’s recipe is one of my favorites.  Maybe it is because of the name (nothing says way too much fun cooking than pizza bubbles) or because I absolutely LOVE pizza, but for whatever reason you should definitely try it.   Grab your kids (I cooked it for the first time with my nieces) and get everyone in the kitchen.

I do have to admit though.  This is not my recipe.  I did not even adjust it.  Not that I am one for writing my own recipes since that is definitely not my gift, but I usually adjust them some.  I got this recipe from Pillsbury’s mailing list.  They periodically send me emails with recipes in them and this one just spoke to me.  If you do not get their emails, you totally should.

Okay…so let’s get started.  After turning on some Aerosmith (what other music would you use with pizza?) I got out my ingredients and got to work.

Ingredients:

  • 6 to 8 tablespoons butter, melted  (I use an entire stick of unsalted butter so I have extra to pour on top and I melt it in the microwave because I am lazy and do not want to get another pot dirty.)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 2  cans (12 oz each) refrigerated biscuits (just use the normal ones, not the big ones)
  • 40 small slices pepperoni (about 3 oz)
  • 8 oz mozzarella cheese, cut into 20 pieces
  • 1/4 cup grated Parmesan cheese
  • 1 1/4 cups pizza sauce, heated

How to make it:

  1. Heat oven to 350°F
  2. Spray a bundt pan with cooking spray.
  3. In small bowl, mix melted butter, Italian seasoning and garlic powder
  4. Set up an assembly line of all of your ingredients (This is where extra hands are very helpful and it’s fun to get messy.)
  5. Separate 1 can of dough into 10 biscuits and press each one into about a 3-inch round.  I just use the palm of my hand.  I guess you could be more precise, but why! 🙂
  6. Place 2 pepperoni slices in center of each biscuit.
  7. Top each with piece of mozzarella cheese.
  8. Bring dough up around filling, press edge to seal (like a pocket), and shape each into ball. It reminds me of playing with play-dough.  Just bring yourself back to your younger days.
  9. Roll the dough in butter mixture and place in the pan.
  10. Continue doing this until you have used up the first 10 biscuits (one tube).
  11. Sprinkle dough balls with Parmesan cheese.  This is one of the two places I venture from the original recipe.  I don’t measure cheese.  What’s the point?  You really cannot have too much.  I just keep sprinkling it on until I am happy.
  12. Repeat the steps with the remaining can of biscuits placing the second can of balls on top of the ones already in the pan.
  13. Pour remaining butter mixture over top.
  14. Here is the second place I venture…I totally sprinkle more parmesan on top.  It’s good that way.
  15. Bake 33 to 38 minutes or until deep golden brown.
  16. Cool for 5 minutes.
  17.  Gently loosen bread from sides of pan.
  18. Place large heatproof plate upside down over pan, turn plate and pan over, and carefully dump out the bubble goodness.
  19. Serve warm with warm pizza sauce for dipping.  I’m sure you could use ranch too just have not tried that yet.  Ranch is good on everything though. 🙂

*I have used sausage and hamburger instead of pepperoni.  It really is good any way. 🙂
